Healthy Salads

Even if I have in my possession a cookbook called 100+ types of salads, I find myself going into a salad rut, i.e., I often make the same kinds of salads, again and again. So I told myself that from now on, I’ll make an effort to seek inspiration from my salad book. I can’t possibly post the same kind of salad on this blog every time I make one! So that shall be my incentive hehe.

As the temperature goes up, my salad cravings will go up as well, so I’m hoping to try at least 30 out of the 100+!

Salad No. 1

Ingredients:
Mixed greens
Colorful coleslaw (Green cabbage, Red cabbage, Carrots)
Zucchini
Cucumber
White Mushrooms
Tomatoes
Corn
Onions
Sunflower seeds

Salad No. 2

Ingredients:
Lettuce
Asparagus
Cherry tomatoes
Boiled egg
Grilled salmon filet
Capers

Salad No. 3

Ingredients:
Green leaves
Tomatoes
Cucumber
Crab meat (Goberge)
Brown toast
Garlic butter

I used Balsamic Vinaigrette for all 3 salads:
Salt & Pepper
Olive oil
Balsamic Vinegar

Instructions: Just chop everything, put everything in a bowl, add the dressing, mix and toss and serve.

P.s. To get out of my rut, I will try other salad dressings in the future! ūüôā

Cheese Sandwich with Veggies

Hey guys! I hope you’ve spent a great Easter weekend! I was out of town visiting family, so I haven’t been cooking for the past few days. I’ve been going to holiday gatherings and there were of course lots of food! So after I came back, I told myself that I’m going to eat very simple and light this week — lots of veggies, salads and soups.

This is an easy cheese sandwich I like to make, which is absolutely yummy!

Ingredients:

  • Cheese, cut in slices (here I used cheddar and swiss cheese)
  • Celery sticks
  • Cucumber slices
  • Cherry tomatoes
  • Coriander

Instructions:

  • Cut the cheese in slices and place them in the bread
  • Put the bread in a toaster oven and heat it up for a few minutes until it’s crispy
  • Add the veggies and it’s ready!

Sweet Potato and Leek Soup

Sweet potato is quite special and different; and it is known to be better than the normal potato we often eat. It’s known to be very high in nutritional value with lots of fiber, complex carbs, protein, vitamins A and C, iron, calcium and antioxidants. I used to not like the taste that much, but I’ve gradually learned to appreciate it. Sometimes it’s just a matter of getting accustomed to food we don’t love at first ‘sight’ (taste). ūüôā

I’ve always made potatoes and leek soups, but I wanted to use sweet potatoes more in my diet. Therefore, while I was browsing through some recipes online, I found this one and I decided to give it a try. It surely tastes different, with a tinge of sweetness, which not everyone will like, but I think the taste is very special! =)

Ingredients:

Sweet Potatoes, Leek, Parsley, Broth, Salt & Pepper, chilli powder

Instructions
  • Put the sweet potatoes, leeks, parsley, salt, pepper, and broth in a pot and bring to a boil
  • Reduce the heat and let it simmer until the vegetables are soft (30-45 mins)
  • Remove from heat and let the soup cool a bit
  • Transfer the soup mixture to a blender and pur√©e
  • Re-heat the soup on a low setting and serve

Healthy Delicious Smoothies

After my Hiphop and Gym sessions, I’m usually quite hungry. While waiting for supper to be cooked, ¬†I like to make a refreshing and delicious smoothie, which usually takes 5 minutes!

Here are 2 of my favourite smoothies for this month: The strawberry mango smoothie and the berries smoothie

1. The Strawberry Mango Smoothie

Ingredients: Frozen mango, frozen strawberries, banana, peach low-fat yoghurt, skim milk.

2. The Berries Smoothie

Ingredients: Blueberries, strawberries, blackberry yoghurt, skim milk

Directions: Place everything in the blender. Cover and blend until the mixture is smooth. Serve immediately.
